Lentils, or lenticchie in the vernacular, have long been served on the Italian peninsula, both in hard times but also to wish for better days. You see, the circular shape of the humble lentil is seen by Italians as resembling a coin – and so, by eating this felicitous foodstuff, Italians wish upon a star. This tradition makes lentils particularly popular during Silvestro, the traditional celebration of New Year’s in Italy, when citizens up and down the country wish for a prosperous year ahead. In deference to this veritable, centuries-old tradition, our chefs have created a slow-cooked lentil ragù for you to try. And, because we like to fuse the old with the new, we’ve added exotic spices from the East alongside harissa and miso, both bringing intrigue and depth. Let us know what you think.

Our signature beef ragù is simmered for hours with Chianti wine until deliciously tender. Paired with beautiful strands of wavy tagliatelle, our ragù is the pezzo forte (the pièce de résistance) of this special dish. STORAGE Like all fresh products, our artisan pasta has a limited shelf life. Keep chilled & consume by the date indicated.
FREEZING: Alternatively freeze before use by date. The pasta can be cooked from frozen, for 3 minutes. The sauce should be defrosted in the fridge overnight before cooking.

Storage

How to cook
1. Bring a large saucepan of water to the boil. Salt the water (around ½tbsp per litre).
2. Cook the pasta in the boiling water for 2-3 minutes. Stir regularly to prevent sticking.
3. Whilst the pasta cooks, put the sauce in a pan and add 3 tbsp (45ml) of the boiling pasta cooking water. Take care to ensure you squeeze all the sauce from the pouch. Gently heat until steaming and then turn off the heat.
4. Lift the pasta out of the water and transfer to the sauce. Toss gently to coat.
Serve immediately. Buon appetito!

3. Place the pasta in the tray directly on the baking sheet and cook for 25 minutes, until piping hot.
4. Remove your pasta from the oven and allow it to rest for 5 minutes before serving. Buon appetito!

How to cook
1. Preheat your oven to 185°C (175°C fan) and place a baking tray in the middle of the oven.
2. Remove the card sleeve and film from the pasta but leave it in its card tray.
3. Place the pasta directly onto the hot baking tray and cook for 25 minutes, until piping hot.
4. Remove your pasta from the oven and allow it to rest for 5 minutes before serving. Buon appetito!
